weekend recap

On Friday evening, I took Delaney downtown to see the movie We Bought a Zoo. Prior to our arrival at the theater, I had a very serious conversation with Delaney about movie theater etiquette. Because she has been known to have trouble sitting still at the movie and wanting to try out the bathrooms about 10 million times. I took care of that by telling her the bathrooms were broken. But about halfway through the movie, she quietly leaned over and asked, “Do they have bathrooms?” So I gave in and told her she could only go once. We made it through the movie with only a couple of mishaps (tipped over drink…by what do you expect? They don’t have cup holders attached to the chairs!) and a few spilled popcorn kernels. All in all it was a successful night out and I’m looking forward to taking her to another movie in the future.

Saturday night was Jeremy’s monthly poker game at our house, so the kids and I, along with Molly, Hayden, Tucker and Scott hung out at my parents’ house. I forgot to take my camera, so these horrible phone pics will have to suffice for today. Normally my phone takes excellent pictures, but I think it was too dark and the result is glowing eyes.

On Sunday I went to the Y with a friend for a Turbo Kick class. We had gone to one on Wednesday evening and could barely move the next day. But we were willing to do it again. Then after our class, we ran into another friend who was going to a Zumba class, so we stayed and did that one too. If only my body would start to show my hard work. I guess if I laid off the cookies and junk food, that would help!

so you think you can dance?



I know I've mentioned our awesome high school drumline in previous posts. Well they joined forces with the dance team (or more likely, the dance team joined forces with them) and performed this phenomonal routine at the basketball game this week.

I'm still learning how to upload videos from my phone, so this was a perfect opportunity for me to practice. And share!!

Allison is the tall, thin girl with dark hair. I believe she is the second one in line as they walk out.

his and hers enchiladas

I have a yummy recipe for Green Chili Enchiladas. They are super high in calories and fat. But don’t worry. I worked out at the Y just so I could indulge in this yumminess!

Start by browning 1 1/2 lbs ground beef and 1/2 cup chopped onions.

Then add 1 can diced green chilies. Salt and pepper to taste.

If you’re wondering about my title, here’s where the “his and hers” comes in. For the normal recipe, add 2 cups jack cheese.

But if you happen to be married to a super weird husband who, like mine, has boycotted all cheeses other than mild cheddar and mozzarella, you can split the ground beef mixture in half. Add 1 cup jack cheese to the yummy enchiladas and 1 cup cheddar cheese to the satisfactory batch.

Spoon mixture onto tortillas. I used burrito size and made 4 of each type.

Roll up and place in a lightly sprayed pan.

For the delicious enchiladas, melt velveeta cheese, cream of chicken soup and diced green chilies on the stove. Pour over enchiladas.

For the picky eater’s enchiladas, pour cream of chicken soup over enchiladas. Sprinkle with diced green chilies and cheddar cheese.

Bake at 320 for 30 minutes.

Voila…everyone is happy!

Here is the original recipe (modified by me to accommodate my own pickiness):

Green Chili Enchiladas

1 1/2 lbs ground beef
1/2 cup chopped onion
2 cups shredded jack cheese
2 cans diced green chilies
8-12 tortillas
1 lb. Velveeta
1 can cream of chicken soup

Brown ground beef and onion. Drain. Add salt and pepper to taste, 1 can green chilies and jack cheese. Spoon 3 T beef mixture onto tortilla. Roll up and place seam down in lightly sprayed 9 X 13 pan.

Heat Velveeta, cream of chicken soup and 1 can green chilies on stove until cheese is melted. Pour over tortillas.

Bake at 320 for 30 minutes.

This recipe, as written, is a full batch of 8-12 enchiladas.

bad kitty

If you’ve ever been to our house, you know we have a cat. And she has affectionately been nicknamed by some as “psycho kitty.” In fact, the other night we had company come over and the first thing Delaney said was, “That’s my kitty, Jinx. She’s mean to me.” No wonder the kid has animal issues!

But Jinx isn’t always mean to everyone. (However, she IS always mean to ME. ALWAYS.)
